Açaí Salad Dressing

INGREDIENTS
  • 1 100g @gratefoodco frozen açaí pulp (thawed to liquid)

  • 1/4 cup coconut oil

  • 1/4 cup apple cider vinegar

  • 2 tablespoon raw honey

  • 1 tablespoon chia seeds

  • 1 teaspoon sea salt

DIRECTIONS

Step 1: Blend all ingredients together till smooth, and toss with salad

Açaí Cashew Sauce

INGREDIENTS
  • 1 100g @gratefoodco frozen açaí pulp (thawed to liquid)

  • 1 cup raw unsalted cashews

  • 2 tablespoon apple cider vinegar

  • 2 teaspoon honey

  • 1 small garlic clove, chopped

  • 1/4 teaspoon fine sea salt

  • 1/4 teaspoon freshly ground black pepper

DIRECTIONS

Step 1: Soak and refrigerate cashews in water for 8 hours or overnight

Step 2: Drain cashews and place in a blender

Step 3: Add remaining ingredients and blend until very smooth

Acai Red Wine Sauce

INGREDIENTS
  • 1 100g @gratefoodco frozen açaí pulp (thawed to liquid)

  • 3 tablespoon olive oil

  • 2 tablespoon chopped shallots

  • 2 tablespoon minced garlic

  • 1 tablespoon chopped fresh thyme

  • 1/4 cup red wine

  • 1 tablespoon balsamic vinegar

DIRECTIONS

Step 1: Sweat shallots for about 2 minutes

Step 2: Stir in garlic and thyme. Cook for 1 minute

Step 3: Deglaze with açaí pulp, wine and vinegar

Step 4: Season to taste with salt and pepper

Step 5: Drizzle sauce over your preferred meat and serve
